Specifically I am wondering what the correct form should be to make the College of Foreign Languages possessive. Should I write "the College of Foreign Languages's event" or "the College of Foreign Languages' event"?

A difficult choice there - whichever way you do it, some readers (who perhaps haven't thought it through carefully) will think you're wrong!
I'd "cheat" and rephrase it to something like: the event held by the College of Foreign Languages.

No, no apostrophe should be used; these are simple plurals of Friday and weekday.
