I'd say a), except that it should be "... a different sense of humour".
I don't think you'd hear people use b) but, even if they did, it'd be "humour", not "humours".

English and French people have a different sense of humour. Yes: "natural" English. Not really (though not "wrong"); this is contrived, stilted, self-conscious, and hence not "natural" English.
